上周的豬肉味噌湯
貴德:一個肥,一個瘦,一個愛吃肉,一個愛吃菜…
朋友老,感情永遠都不老…只要湯底有夠味,什麼變化都是添滋味…
材料:豬五花肉250公克、白蘿蔔1/4條、紅蘿蔔1/2條、香菇6朵、牛蒡1/4條、豆腐一塊、蔥一枝。
調味材料:昆布高湯一鍋(或清水)、醬油一小匙、味噌5匙、味醂一小匙、酒2匙。
作法:
五花肉和以豬肉纖維垂直的方向,切易入口的厚度。
各式蔬菜切為相等大小的塊狀,牛蒡切好後入鍋前需先泡在水中。
煮一鍋水,五花肉入鍋汆燙數秒變白後起鍋,牛蒡略煮2~3分鐘後起鍋。
另一個鍋中,以少許油拌炒紅、白蘿蔔後,加入牛蒡翻炒,倒入酒,蓋鍋蒸煮三分鐘。
豬肉放入鍋中後,加入昆布高湯,開大火煮滾。
水滾後,豆腐剝塊放入湯中,加入青蔥及調味料、味噌,再加熱至滾。
含笑食堂料理關鍵:
豆腐可先以重物壓除水分,入湯後會更入味。
次類燉煮的食物,可煮滾後放涼,帶食用時再重新加熱食用。放涼的過程會使得湯汁與食材的味道更為融合,也會更為入味。
