土豆燒肉
食材
*五花肉250克
*土豆250克
*醬油2湯匙
*糖2湯匙
*蔥段、薑塊各適量
*紹酒1湯匙。
做法
1、將五花肉洗淨,切成2-3公分見方的塊;將土豆去皮洗淨,切成滾刀塊。
2、炒鍋中倒入適量油,燒至七成熱,投入土豆塊炸成金黃色,撈出瀝干油待用。
3、炒鍋中留約4湯匙油,中火加熱,放入糖,用鍋鏟攪動使糖受熱均勻,糖漸漸
融化並產生金黃色的氣泡時,投入肉塊煸炒,使之上色均勻並出油,倒掉一些
油後,下醬油、紹酒、蔥段、薑塊翻炒,加入適量水,用大火燒開,再改用小
火燉熟快爛時,放入土豆燒至熟爛入味,出鍋即可。
P.S.若土豆切好後不是馬上使用,可浸入水中防止變色;土豆要等排骨半熟時放入
,否則土豆易碎,影響菜肴質量。
