材料:牛肉片200g、土豆2顆、蒟蒻1片、洋蔥1顆、紅羅蔔1條、青豆仁適量
煮汁:水400cc、醬油90cc、酒45cc、味醂30cc、糖25g、柴魚素4g
先把土豆去皮後以滾刀切方式切一口大小即可,再放入水裡面浸泡去除澱粉質。
洋蔥切成大塊的絲狀,再把紅羅蔔也切成滾刀塊方式,份量上不用太多,他只用來配色。
把水、醬油、酒、味醂、糖、柴魚素一起混合攪拌,這就是我們的煮汁。
蒟蒻用水汆燙約三分鐘後,這樣就能去除蒟蒻的腥味也比較能入味也能更有彈性,汆燙後
取出,可用刀切或用手撕的方式,處理出約土豆的大小即可。
把鍋子燒熱加點沙拉油後,把牛肉片放入鍋中煎炒一下,再把洋蔥、蒟蒻、土豆、紅羅蔔
一起加入鍋中,充分的拌炒讓食材能吸收油質。
最後把之前的煮汁加入,先開大火等煮開後再開中小火,燉煮過程要略為攪拌,燉煮時間
約十分鐘,這樣就能完成土豆燒肉。
